Ranch Chicken Kabobs for Carnivores
This is a great way to serve chicken in a new way. I had been looking for a chicken recipe for kabobs. I purchased some baskets that would let me produce kabobs without fear of the meat or veggies dropping into the barbecue flames. This recipe was going to be a good way to try them out.
Ingredients
- 4 skinless boneless chicken breasts
Marinade
- 1/4 cup olive oil
- 1/2 cup buttermilk
- 1 1/2 tablespoon powdered ranch dressing mix 1/2 package
- One and 1/2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- One half teaspoon lemon juice
- 1/2 teaspoon vinegar
- 1/2 teaspoon thyme or rosemary
Instructions
- Cut the chicken breasts into 1-inch chunks.
- In a bowl mix the remaining ingredients.
- Pour the marinade over the chicken and refrigerate for at least 30 minutes(overnight is better).
- Preheat the grill.
- Clean the grill’s grate.
- You want to get the surface temperature of the grate to be near 450º.
- Pack the chicken into the kabob baskets and discard the marinade.
- Place over direct heat with the wooden handle(if your baskets have wood handles) outside of the grill and turn every 5 minutes until internal temperature of 165 degrees.
- 15-20 minutes of cooking time, dependent on the grill and chicken size.
These kabob baskets are great. Simply fill’em up and put them on the grill. I just make sure the handles are outside(mine have wood handle inserts) of the barbecue when I close the top. I like that there are a lot of pieces of chicken in one basket. Cooking using this method doesn’t dry out the chicken. There are no worries about the small pieces falling into the flames.
These chicken kabobs are everything I was looking for. They turned out beautifully moist and I made a big bowl of them at one time. There is no barbecue sauce flavor for this chicken. It’s a great flavor change. Try ranch chicken kabobs for carnivores the next time the carnivore in you comes out.
