These are my mom’s refried beans with cheese. She would make this version just for me. For anyone else, she had a different recipe. She always kept a jar of bacon grease in the refrigerator. When I would drop by that jar would come out and she would make these beans. The bacon grease imparts a smoky flavor to the beans. They are different in that they are thick and not a watery refried bean. The beans were so thick they would separate in the pan when a spoon was run thru them. Also, she would add Jack cheese to the beans not as a garnish but as an ingredient. That made these beans a meal by themselves. Better than meat, refried beans with cheese.


I don’t have the time to make them from scratch like she used to do. So to cut down some time I use canned refried beans and bump them up a couple of notches. I make these every time I have to cook a pound of bacon. Reserve the bacon grease while cooking the bacon. I cook my beans right after cooking the bacon while the pan is still hot. So if you’re a busy person here’s a simple way to get home type refried beans quickly.

Ingredients:

  • 2 cans of refried beans
  • 1/2 cup bacon grease(approximately 1 pound of bacon)
  • 4 to 6 ounces of frozen jack cheese(thawed)

Directions:

  1. Heat the bacon grease in a large skillet at a medium-low temperature.
  2. When a spoonful of beans dropped into the grease sizzles add the cans of refried beans one at a time. If the beans stop sizzling allow the grease to get back up to temperature before adding the second can.
  3. Once the beans are in the bacon grease stir constantly to mix them together.
  4. Stir until the beans separate in the pan with the spoon(see video).
  5. When the beans separate remove from heat and sprinkle crumbled jack cheese over the top.
  6. Gently stir the cheese into the beans so that chunks of cheese can still be seen.
  7. Let the cheese “melt” before serving.

I use jack cheese that has been previously frozen. The cheese crumbles very nicely after having been frozen.
